Unless you can expand upon your existing projects, you should take something on with more complex scope that can tell the story that you've sharpened your skills in some area. Worst case, a manager or recruiter will think your technical skills have atrophied and you're going to require an even further investment in ramping up/mentoring vs. Trying to pad it with more retail experience is not going to get it to be viewed more favorably. I know my recommendations are going to introduce even more white space into your resume. Otherwise a recruiter or manager gets the sense that you were playing around with a language, software, or tool for the sake of learning or checking a box.
